Rob of San Francisco, California needs some serious help with is bland mussel recipe.

  • 3 TBS Olive Oil
  • 1/3 Cup Chopped garlic
  • 1/4 Cup Chopped Shallots
  • 2 Pounds Green Lip Mussels
  • 3/4 Cups Chardonnay
  • 24 Ounces Chicken Stock
  • 2 TBS Fresh Thyme
  • French Bread
  • Oilive Oil for Tasting
  • Salt & Pepper
  • 2 Ounces Whole Butter

Procedure: In a hot skillet add in olive oil, garlic, and shallots and caramelize.

Once caramelized add in mussels and saute for 3-4 minutes.

Deglaze with chardonnay and further reduce.

Add chicken stock and fresh thyme and braise for 7-8 minutes. While braising slice up french bread, baste with olive oil and toast in oven on 350 degrees for 8-10 minutes.

Once bread is done place in the center of a bowl.

Finish mussels with salt, pepper. and whole butter.

Pour over the french bread and enjoy!
