Sharon of Atlanta, Georgia makes beef stroganoff all the time, but complains that her sauce ends up curdling most of the time as well.
- 1 TBS olive oil
- 10 Ounces filet mignon
- 3 TBS shallots
- 1 Pad of butter
- 1/2 Cup cremini mushrooms
- 1/3 Pound parboiled linguini
- 1/4 Ounce butter
- 1 TBS fresh tarragon
- 1 Cup sour cream
- 1 TBS water
- Salt & pepper to taste
Procedure: Slice up filet into long strips and season with salt and pepper.
In a hot pan add in oil and cook filet to medium rare.
Set the steak aside and add in shallots.
Once shallots are carmelized set on top of filet.
In the same pan add in one pad of butter and cook mushrooms.
Add in tarragon.
In a separate pan add noodles and heat up using a little bit of olive oil or butter.
Add sour cream and water to mushroom pan, add in beef and shallots and cook for 3-4 minutes.
Place sauce on noodles and enjoy!
