 Justin of Austin, Texas is looking for a solution to his “authentic” chili.

  • ¼ Cup olive oil
  • 1 Red pepper
  • 1 Green pepper
  • 1 Yellow pepper
  • 1/3 Cup garlic
  • 1 Serrano pepper
  • 1 Jalapeno pepper
  • 1 Anaheim pepper
  • 5 Chipotle peppers
  • 4 Pounds lean ground meat
  • 4- 28 Ounce cans chopped tomatoes
  • 2 -15 Ounce cans dark kidney beans
  • 2- 15 Ounce cans light kidney beans
  • 2 Quarts vegetable stock
  • 3- 6 Ounce cans tomato paste
  • Cayenne (variable)
  • Cumin (variable)
  • Red pepper flakes (variable)
  • Chili powder (variable)
  • Paprika (variable)
  • Lea & perrins to taste

 

Procedure:  In a hot large pot add in olive oil and onions, all peppers, and garlic.  Once carmelized add in lean meet and cook through out.  After meat is completely cooked add in tomatoes, beans, and vegetable stock, and bring to a boil.  Once boiling add in tomato paste and all seasonings.  Let simmer for at least an hour and serve.  Enjoy!
