Onion Soup

- ¼ Cup Olive oil
- 4 Yellow onions sliced
- 3 TBS sugar
- 3 Cloves garlic
- 1 Cup Marsala wine
- 1 Gallon veal stock
- 1 Bay leaf
- 1 ½ TBS thyme
- 2 TBS sweet basil
- 1 TSP Tabasco
- 1 TBS Lea & Perrins sauce
- Salt and pepper to taste
Procedure: In a rondeaux on high heat put in olive oil and sauté onions and garlic for 30-45 minutes. Add sugar if needing more carmelization. Deglaze with Marsala wine and reduce by half. Add in veal stock, all herbs, and all seasonings. Cook for at least 1 hour so the seasonings and herbs will come out. Salt and pepper to taste.
