Taryn of Columbia, Missouri has a low college budget, but loves Spanish rice and is needing a little snap added to the current Spanish rice recipe she already has.
- ½ Cup white onion
- 1 TBS olive oil
- 1 TBS garlic
- ½ Cup can diced tomatoes
- 1/3 Cup Spanish style tomato sauce
- 1 TBS dry oregano
- 1 bag of instant Uncle Ben’s rice
Procedure: In a hot skillet add in live oil and cook onions and garlic. Once caramelized (usually 4-5 minutes on high heat) add in tomatoes, tomato sauce, and oregano. Return to the heat and simmer for another 3 minutes. In the mean time break up the bag of rice, tear off the top and cook in the microwave for 90 seconds. Once rice is done, add it to the tomato mixture and fold in. Enjoy!
