- 1 Cup water
- ½ Cup quinoa
- 1 TBS garlic
- 1 TBS lemon juice
- 2 TBS calamata olives
- 2 TBS green onions
- 1 TBS fresh parsley, cilantro, and mint
- 1/3 Cup of watercress
- ½ Cup each tomato and cucumber
- ¼ Cup of feta cheese
- Salt and pepper to taste
Procedure: In a pot add quinoa and water and bring it to a boil. Once it is boiling cover it and simmer on low heat for 20 minutes. Let cool. Chop all vegetables and herbs accordingly and add in the quinoa. Enjoy!
