  •  1 Cup water
  • ½ Cup quinoa
  • 1 TBS garlic
  • 1 TBS lemon juice
  • 2 TBS calamata olives
  • 2 TBS green onions
  • 1 TBS fresh parsley, cilantro, and mint
  • 1/3 Cup of watercress
  • ½ Cup each tomato and cucumber
  • ¼ Cup of feta cheese
  • Salt and pepper to taste


Procedure: In a pot add quinoa and water and bring it to a boil.  Once it is boiling cover it and simmer on low heat for 20 minutes. Let cool.  Chop all vegetables and herbs accordingly and add in the quinoa. Enjoy!
