Braised Mussels with Garlic, Fresh Thyme, & French Baguette

FIXED RECIPE
- 3 TBS Olive Oil
- 1/3 Cup Chopped garlic
- 1/4 Cup Chopped Shallots
- 2 Pounds Green Lip Mussels
- 3/4 Cups Chardonnay
- 24 Ounces Chicken Stock
- 2 TBS Fresh Thyme
- French Bread
- Oilive Oil for Tasting
- Salt & Pepper
- 2 Ounces Whole Butter
Procedure: In a hot skillet add in olive oil, garlic, and shallots and caramelize. Once caramelized add in mussels and saute for 3-4 minutes. Deglaze with chardonnay and further reduce. Add in chicken stock and fresh thyme and braise for 7-8 minutes. While braising slice up french bread, baste with olive oil and toast in oven on 350 degrees for 8-10 minutes. Once bread is done place in the center of a bowl. Finish mussels with salt, pepper. and whole butter. Pour over the french bread and enjoy!
