Tomato & Roasted Pepper Bruschetta

  • 1 Loaf Ciabatta Bread
  • 1 Loaf Italian Bread
  • 1/2 Cup Olive Oil
  • 2 TBS Garlic

Tomato Bruschetta

  • 1 Cup Diced Roma Tomatoes
  • 2 TBS Garlic
  • 1 TBS Balsamic Vinegar
  • 1/2 Cup Olive Oil
  • 2 TBS Fresh Basil
  • S & P To Taste
  • Gorgonzola Cheese To Taste

Roasted Pepper Bruschetta

  • 1 Cup Julienne Roasted Red and Yellow Peppers
  • 2 TBS Garlic
  • 2 TBS Shallots
  • 1/2 Cup Olive Oil
  • 2 TBS Fresh Basil
  • S & P To Taste
  • Goat Cheese To Taste

Procedure:  in a bowl, mix together 2 tbs garlic, 1/2 cup olive oil, salt, & pepper and set aside.  Slice bread accordingly, place on a sheet pan lined with parchment paper, and brush with garlic olive oil mixture. Put in oven on 350 degrees for 10-12 minutes.  While in the oven mix together tomato bruschetta ingredients minus the cheese in a bowl and set aside.  Do the same with the roasted pepper ingredients minus the cheese and also set aside.  Once toasted bread is complete, plate up accordingly and finish with cheese.  Enjoy!
