Italian Sausage Stuffed Portoello Mushrooms

FIXED RECIPE
- 1 TBS olive oil
- 1/2 Cup red onions chopped
- 2 TBS garlic chopped
- 1 1/2 Cup red, yellow, and green bell peppers chopped
- 4 Links italian sausage
- 4 Portobello mushrooms
- 2/3 Cup madeira wine
- 1 Cup panko
- 3 TBS parmesan cheese
- 1/4 Cup basil
- 2 TBS parsley
- 2 Eggs
- Extra olive oil to coat mushrooms
- Extra panko
- Extra parmesan cheese
- Salt and pepper to taste
Procedure: In a hot skillet, add in olive oil, onions, garlic, and bell peppers and saute for 7-8 minutes, deglazing with madeira wine. In another skillet cook sausage, make sure casing is removed. Once sausage is cooked, then deglaze with madeira also. Place both ingredients from pans into a food processor. Process with bread crumbs, parmesan cheese, basil, and parsley. Take processed ingredients and add in a mixing bowl. Adjust seasonings and fold in 2 eggs. Coat the mushrooms in olive oil salt and pepper. Place mushrooms on a sheet pan and stuff them with appropriate amount of sausage stuffing. Top of stuffed mushrooms with extra panko crumbs and parmesan cheese. Bake at 400 degrees for 15-20 minutes. Serve warm. Enjoy!
