Coconut Curry Sauce

 Irene of Boise, Idaho is trying to make an authentic curry sauce using minimal ingredients.

  • 1 TBS garlic, chopped
  • 1 TBS ginger, peeled and minced
  • 1 TBS sesame oil
  • 3 TBS tomato paste
  • 1 TBS Curry paste
  • 1 TBS soy sauce
  • 1/3 TSP coriander
  • 1/3 TSP cumin,
  • 1/3 TSP paprika
  • 1 14 Ounce can of coconut milk

Procedure: Sweat garlic and ginger in olive oil. Add curry paste and tomato paste. Mix well. Cook for 5 minutes. Whisk in all other ingredients. Simmer at least 20 minutes. Remove from heat and strain through chinois.
