Roasted Pepper & Jack Daniels Barbecue Sauce

  • 3 TBS Olive Oil
  • 1 Red Onion
  • 1 Sweet Onion
  • 2 Chipotle Peppers
  • 1 Serrano Pepper
  • 1 Poblano Pepper
  • 5 Cloves Garlic
  • 1 Cup Jack Daniels
  • 2 Cups Brown Sugar
  • 3 Cups Apple Cider Vinegar
  • 2 28 Ounce Cans of Chopped Tomatoes
  • 2 TBS Dry Mustard
  • 1/2 Cup dark Molasses 
  • Grated Rind from 1 Orange
  • Grated Rind from 1 Lime
  • Grated Rind from 1 Lemon
  • Salt & Pepper To Taste

Procedure:  In a large pot on high heat add in olive oil and caramelize onions, garlic, and peppers.  Once veggies are roasted deglaze with Jack Daniels and cook alcohol completely out.  Next add in brown sugar, vinegar, tomatoes, mustard, and molasses and let sit for 1-2 hours.  Next Puree using a hand blender until fairly smooth.  Place pot back on medium heat and grate in citrus and let stand for another 45 minutes.  Adjust Seasonings.  Enjoy!
