Pan Seared Scallops with Lemon, Thyme, & Vine Ripe Tomatoes

  • 3 Fresh Jumbo Scallops
  • 1 TBS Olive Oil
  • 1 TBS Chopped Garlic
  • 1 TBS Chopped Shallots
  • 3 Chopped Vine Ripe Tomatoes (Colors of Choice)
  • 1 TBS Fresh Thyme
  • Zest and Juice of 1 Lemon
  • Salt and Pepper To Taste

Procedure: Pat the scallops very dry with a cloth, then season very well with salt and pepper and place them in a hot skillet with olive oil.  Sear until golden brown on both sides.  Once they are cooked set them a side and in the same pan add in garlic and shallots and caramelize.  Once cooked add in tomatoes, thyme, zest and juice.  let cook for 2 minutes and season with salt and pepper.  Pour tomato mixture over seared scallops.  Serve hot and enjoy!
