Curry Chicken with Fresh Vegetables and Rice

Coconut Curry Sauce

  • 2 Chicken Breasts
  • 1 TBS Sesame Oil
  • 1 Cup Diced Peeled Yukon Potatoes
  • 3/4 Cup Peas
  • 3/4 Cup Slivered Carrots
  • 2 TBS Fresh Chopped Cilantro

 

Procedure: Make the coconut curry sauce according to the recipe and set aside.  Next season the chicken breasts with salt and pepper and slice very thing.  In a hot skillet with sesame oil sear off the chicken until done.  Add in the diced potatoes, peas, carrots and sauce.  Cover the pan and let simmer on medium-high heat for 10-12 minutes.  Finish with Fresh Cilantro and serve with white rice.  Serve hot and enjoy!
