Sicilian Bone-In Ribeye with Wild Mushrooms

  • 1 TBS Slivered Garlic
  • 1 TBS Slivered Shallots
  • 1 TBS Chopped Fresh Basil
  • 1 TBS Chopped Fresh Thyme
  • 1 TBS Chopped Fresh Oregano
  • Olive Oil To Coat
  • 1 Bone-in Ribeye
  • Salt and Pepper To Taste

Wild Mushrooms

  • 1 TBS Chopped Garlic
  • 1 TBS Chopped Shallots
  • 1/3 Cup Sliced Fresh Shiitake Mushrooms
  • 1/3 Cup Sliced Fresh Cremini Mushrooms
  • 1/3 Cup Sliced Fresh Oyster Mushrooms
  • 1/4 Cup Cabernet Sauvignon
  • 6 Ounces of Beef Stock
  • 1 Ounce of Whole Unsalted Butter
  • Salt and Pepper To Taste

Procedure:  Prepare all ingredients for the marinade accordingly.  Place ribeye in a bowl and submerge in marinade and set in the cooler for at least 30 minutes.  Once it is done marinating season well with salt and pepper and place in a hot skillet and caramelize both sides until desired temperature is reached.  While the steak is cooking prepare all ingredients for the wild mushrooms accordingly.  Once the ribeye is cooked, set it aside and in the same pan add in chopped garlic and shallots.  Be sure to caramelize before adding in mushrooms.  Caramelize those before deglazing with red wine.  Once wine is consumed by the mushrooms further deglaze with beef stock and finish with butter and salt and pepper.  Pour over ribeye and serve hot! Enjoy!
