Gluten-Free Banana Lemon Bread

Erin and Steve both need gluten free diets and we were more than happy to share this recipe with them....

  • 8 Ounces Butter
  • 1 1/2 Cups Sugar
  • 3 Large Bananas
  • 4 Eggs
  • Zest and Juice of 1 Lemon
  • 1 Cup Brown Rice Flour
  • 1 Cup Buckwheat Flour
  • 1 TBS Baking Powder
  • 1/2 TSP Salt
  • Butter and Rice Flour To Coat

Procedure:  Cream together butter and sugar in a kitchen aid.  In the mean time puree eggs and bananas and pour mixture into creamed butter and sugar.  Zest and juice 1 lemon right into creamed butter mixture as well.  In a separate bowl sift together all dry ingredients and then pour into creamed butter mixture.  Pour into a pan that has been greased and floured (rice flour) and bake in the oven on 350 degrees for 60-70 minutes.  Let cool and enjoy!
