Italian Style Cheesecake

  • 3 Pounds Ricotta Cheese
  • 9 Eggs
  • 1 1/2 Cups Sugar
  • 1/4 Cup Heavy Cream
  • 1/3 Cup A.P. Flour
  • 2 TBS Vanilla
  • 2 TBS Cinnamon
  • Rind and Juice of 2 Lemons
  • Butter and Flour For Greasing

Procedure:  In a Kitchen Aid add all ingredients except the last one and mix very well until smooth.  In a 10 inch spring form pan, grease and flour and add mixed cheesecake batter.  Place in the oven on 350 degrees for 90 minutes. Then turn oven off and let stand in the oven for 30 more minutes.  Cool completely and serve cool.  Enjoy!
