Early Bird Coffee Cake with Oatmeal Streusel

Coffee Cake

  • 1 1/2 Cups Sugar
  • 6 Ounces Unsalted Butter
  • 3 Eggs
  • 1/4 Cup Milk
  • 1 TBS Vanilla
  • 9 Ounces Sour Cream
  • 2 1/2 Cups A.P. Flour
  • 2 TSP Baking Powder
  • 1/2 TSP Baking Soda
  • 1/2 TSP Salt

Oatmeal Streusel

  • 1/3 Cup Sugar
  • 1/3 Cup Brown Sugar
  • 1 TSP Cinnamon
  • 1/4 TSP Nutmeg
  • 4 Ounces Butter
  • 1/2 Cup Oatmeal

Procedure:  For the coffee cake: cream together butter and sugar until fluffy.  Then add in the eggs one at a time until completely combined.  Next add in the milk, vanilla and sour cream until completely combined.  Sift together all dry ingredients and add it to the creamed sugar mixture until just combined.  Pour the batter into a 9 inch square cake pan that has been sprayed with non-stick spray.  To make the streusel:  Combine all ingredients in a bowl and cut in the butter until completely combined.  Sprinkle streusel over the batter and place the pan in the oven on 350 degrees for 50-55 minutes.  Let cool.  Enjoy!
